First of all, let me state that I can not take credit for this recipe at all! My good friend Hannah fixed this for us one night over at their house and it is simply delicious!
I had to have the recipe and I made it for supper the other night. I tweeted this picture of it ...

and many of you asked me to share the recipe! And since I give the people what they want, here is the recipe. Num Num Num!
Ingredients:
4 small boneless skinless chicken breast halves (1 lb.) (I used tenders because it's all I had.)
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/4 cup water
1/4 cup pesto
2 cups grape or cherry tomatoes
1 cup KRAFT Finely Shredded Italian* Five Cheese Blend
make it
Directions:
HEAT large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cover. Cook 5 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.
ADD cream cheese, water, pesto and tomatoes to skillet. Cook, uncovered, on medium heat 2 min. or until heated through, stirring occasionally.
RETURN chicken to skillet. Cook and stir 1 min. or until chicken is coated and heated through. Sprinkle with shredded cheese.

I served it with fettucini noodles and homemade garlic cheese bread.


The recipe is super quick to whip up and serve. It's definitely a new favorite in our home!

ReplyDeleteWow, that's a lot of gooey cheesy goodness!! YUM. Okay, I have to ask--how is Weight Watchers going? Since I can't catch up on FB right now, I thought I'd just go the blog route to ask! Are you still following it? Or are you now in maintenance mode with portion control?
ReplyDeleteWe had to eat out a lot when we first put our house on the market because of showings and it was so hard to eat well when we were on the go! Eating out kills my good eating habits, even with healthy options available ... my eyes wander toward the fried and salted, leaving the fresh and green for someone else to eat! Now we're eating at home again and my body is thanking me for it.
I really hope it's going well for you! I've been thinking about you! (Sorry this is super long. Annoying, I know!)
