Tuscan Pesto Chicken Simmer.

{Update! This is NOT a Weight Watchers recipe, so all of you point counters, I'm not sure what the points would be for this. I do know the calories though, and it is 410 calories per serving (one chicken breast or 4 tenders). Also, several of you have asked about the WW journey and how it's going! I dropped 12 lbs with WW and it gave me the boost I needed to get serious. I stopped "counting points" about a month ago and have started a low-calorie eating plan with a group of girlfriends (LOVING it). I will recommend WW to any and every one because it works! I just got to a point where I was ready for a change and switching to something else made my body start losing again. I was stuck at 12 lbs for about 3 weeks with WW, but that's pretty typical once you are close to your goal weight. So, that's what happening in my Quest for Health! :)}

First of all, let me state that I can not take credit for this recipe at all! My good friend Hannah fixed this for us one night over at their house and it is simply delicious!

I had to have the recipe and I made it for supper the other night. I tweeted this picture of it ...

and many of you asked me to share the recipe! And since I give the people what they want, here is the recipe. Num Num Num!

Ingredients:
4 small boneless skinless chicken breast halves (1 lb.) (I used tenders because it's all I had.)
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/4 cup water
1/4 cup pesto
2 cups grape or cherry tomatoes
1 cup KRAFT Finely Shredded Italian* Five Cheese Blend
make it

Directions:
HEAT large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cover. Cook 5 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.

ADD cream cheese, water, pesto and tomatoes to skillet. Cook, uncovered, on medium heat 2 min. or until heated through, stirring occasionally.

RETURN chicken to skillet. Cook and stir 1 min. or until chicken is coated and heated through. Sprinkle with shredded cheese.

I served it with fettucini noodles and homemade garlic cheese bread.

The recipe is super quick to whip up and serve. It's definitely a new favorite in our home!

  3. Wow, that's a lot of gooey cheesy goodness!! YUM. Okay, I have to ask--how is Weight Watchers going? Since I can't catch up on FB right now, I thought I'd just go the blog route to ask! Are you still following it? Or are you now in maintenance mode with portion control?

    We had to eat out a lot when we first put our house on the market because of showings and it was so hard to eat well when we were on the go! Eating out kills my good eating habits, even with healthy options available ... my eyes wander toward the fried and salted, leaving the fresh and green for someone else to eat! Now we're eating at home again and my body is thanking me for it.

    I really hope it's going well for you! I've been thinking about you! (Sorry this is super long. Annoying, I know!)
