US Cooking Tour Stop 3: LOUISIANA

I'm trying to come up with a personal memory from Louisiana since now that I'm recapping my cooking tour stops here, I can make it more personal with a small story from each state that I've not only completed as a challenge, but have also been to in real life. That was one really long sentence. I hope it made sense. 

Louisiana. The only time I've been to The Pelican State is when I was a young girl and we visited New Orleans on vacation. I honestly don't remember much about it .... time out. I just texted my mom and she doesn't remember going to New Orleans as a family. They went with some friends on a business trip back in the 80's but apparently I wasn't there. Now I am 90% sure I made this up and I am mixing my memories of San Antonio up with New Orleans for whatever reason. So, yeah, no state story this week! There was a glitch in the matrix.

But we made some good Gumbo and Beignets anyway! 

Chicken & Sausage Gumbo

1 C oil
1 C flour
1 onion, diced
1 green bell pepper, diced
1-2 stalks celery, diced 
Andouille sausage
Rotisserie chicken
Garlic to taste
Tony’s Cajun seasoning to taste
6 C chicken stock
1 bay leaf 

Bring 1 C oil to boil on med-high heat. Add flour and whisk 8 minutes until a golden chocolate brown color. 
Add vegetables & sausage to roux, cook 5 min. 
Add garlic, cook 5 more minutes. 
Add seasonings and chicken stock - bring to boil. 
Lower heat, add bay leaf and simmer 1 hour. 
Add cooked chicken, simmer 1 more hour. Stir occasionally. 
Remove bay leaf and serve over rice.

And we cheated with the beignets and I bought an authentic mix from Cafe Du Monde (you can buy it at World Market) - but I mean, you can't get more Louisiana than that!
