What a Crock!

There are certain months where Husby has no set time when he gets off work. It's just up in the air - and whenever he's done, he's done. This past month, he was supposed to get off at 6pm, but mostly arrived home around 8. This makes meal planning/prep next to impossible! Cooking meals that require last minute attention have gone out the window around here, because I don't feel like being in the kitchen at all hours of the evening, and if I prepare it for when he's "supposed" to be off, it will be ice cold by the time he finally does get home. So, crock pot meals have been a life saver for us lately. I can throw the meal together in the morning and it can cook and simmer until late evening when we are ready to finally eat it.

The crock pot had to be invented by the wife of a medical resident - of this I am SURE! :)

But guess what, friends? This chick has officially run out of crock pot dinner ideas. And I need some HELP!

We have exhausted roasts and stews, and I've done the BBQ chicken and even some pork chops. We just need something different. I know there are thousands of awesome crock pot recipes out there ... it's just that I don't know about 'em. And I like "tried and true" recipes from my trusty blog friends, so if you could hook me up with your favorite crock pot recipes, you'll be my BFF.

If you have some great ones, share them and I will cook and review them on my blog. It'll be so much fun!

And I'll be forever indebted to you and your slow cooking knowledge. And hey, maybe in the mean time I can help out some other ladies in the same situation as me in providing some great new recipes! Here's to yummy hot suppers for the late eating families out there!

  2. This is one for chicken that is delish! Serve over rice.

    3-4 frozen chicken breasts
    1 package of italian dressing seasoning
    1/2 stick butter
    1 block of cream cheese

    Throw it all in and cook on low for about 5 hours.

    Chicken Stroganoff-Crockpot Method

    Ingredients
    1 lb frozen boneless chicken breasts.
    1 can of cream of mushroom soup.
    16 oz. carton of sour cream
    1 envelop dry onion soup mix.

    Put frozen chicken in crockpoot. Mix the rest of the indredients up and pour over chicken. Cook low for 7 hours. serve over rice or noodles!

  5. I have a super easy and really delicious recipe.

    Ingredients:
    1 pork tenderloin or 4 chicken breasts
    1 jar of salsa verde

    I have also used Pace Picante sauce (mild) and it is just as delicious.

    Place meat in crock pot, pour salsa verde over the top and place lid on crockpot. Cook on low for five to six hours. When done shred chicken or pork right in the pot. It should shred easily and will mix with the sauce to make a delicious meal. I make soft tacos with this recipe or you could scoop some over rice if you don't feel like tacos. If you make a lot you could also make enchiladas if you have leftovers. This recipe is so simple with only two ingredients but really tastes so good. I hope you like it too.

  6. This is my favorite crock pot recipe:

    4 - 6 chicken breasts
    2 cans of cream of chicken
    1/4 c water
    a box of chicken stove top stuffing
    1/2 a stick of butter
    1 pack of provolone cheese

    lay half of your breasts in bottom, mix water with both cans of cream of chicken, pour half over chicken and then repeate with the rest of chicken and cream/water mixture. Pour the stuffing in and pour melted butter over it. Let it cook for 6 hours and put the cheese on about 20 minutes before eating.
    IT'S SO GOOD!

  7. I JUST made this over the weekend and it was so delicious! It's the easiest pulled pork around!!

    1 pork butt / Boston butt (I hate that its called a "butt.") We used a 4 lb. and it was plenty for our family of three...with leftovers to boot.

    1 can of diet cola

    1/2 bottle of Sweet Baby Rays BBQ sauce

    Put all ingredients in the crock pot for 4-8 hrs (4 if high heat, 8 if on low). Once done, shred the pork and serve on kaiser rolls. Perfect with a salad, and we made "pulled pork nachos" with the leftovers.

If you can find Bob's Red Mill Whole Grains and Beans Soup mix (here is a link so you can see what it looks like: http://www.soap.com/p/bobs-red-mill-whole-grains-and-beans-soup-mix-26-oz-2-pk-212380) there is a VERY simple recipe on the back for a curry soup and it is so delicious! All you do is throw in an onion, some frozen boneless, skinless chicken and a few spices, it is healthy & amazing. The only thing I add is a little curry paste to spice it up a bit.

    I make it in the crockpot with frozen boneless skinless chicken breasts and add black beans, it is amazing. You do have to make the sauce separately but it is so worth it, that is the best salsa ever. I am so addicted that I have tried all sorts of other recipes with that salsa :)

As a person on the other side of things (the one in medical training), it stuns me to realize how much my boyfriend puts up with, and even goes out of his way to make my life easier.   14. Made this yesterday...SO good! And so easy!

    Potato Soup

    1 bag of frozen shredded hashbrowns
    3 cans of chicken broth
    1 can of cream of chicken soup
    1 block of cream cheese (add about an hour or so before you want to eat)
    can add chopped onion

  15. Oh boy do I have a few for you!! A new favorite for my family is chicken and dumplings. SO tasty! My husband usually isn't a fan of regular chicken and dumplings, and he loves these!

    Another yummy one is the cilantro lime chicken. We use it to make a slew of Mexican dishes. Fajitas, chicken tacos, enchiladas, or the chicken is tasty on its own with a couple sides. Delish! The sauce you make to pour over it has actually also become a new favorite salsa recipe too!

  17. The recipe that Ashley E. posted is stellar - that's what I was going to post here! I add a can of cream of chicken soup to it though? And then serve it over rice and green beans on the side. Super tasty!

  18. I actually have an entire book of Southwestern crock pot recipes. I haven't used it in a little while because we've been planning our meals a bit differently lately but I do remember a great one for stuffed bell peppers. It's basically just uncooked rice, water, ground beef, spices and cheese stuffed into the peppers and cooked on high for 4 hours. Or maybe you could do low for 8. Sorry I can't be more specific ;)

  19. I LOVE the crockpot and use mine all the time. And I don't have a good excuse like you! My fav recipes are actually already here... Chicken Stroganoff is really good, especially over noodles. We love the Potato Soup recipe that Stacy mentioned. So, so yummy during the cold winter months. And crockpot Chicken and Dumplings are becoming a regular meal at our house! I highly recommend these 3 and can't wait to try out some of the new recipes I see. =)

    Thai Peanut Chicken

    8 chicken thighs - skinless
    1/4 cup peanut butter
    3/4 cup salsa
    1 Tablespoon soy sauce
    1 teaspoon ginger
    hot sauce - if desired
    1/4 cup chopped peanuts
    1/4 cup chopped cilantro

    Place chicken in crockpot and mix all ingredients through hot sauce. I put mine in a jar and shook it up. Pour sauce over the top and cook on low for 8-9 hours.

    Take chicken out with slotted spoon onto a serving dish and pour sauce over and sprinkle with cilantro and peanuts. Serve with Rice and Snap Peas. Enjoy!

  21. We use our crockpot all the time! In fact we just made this delicious and super easy recipe last night:

    3-4 boneless skinless chicken breasts, cut up into small chunks
    2 cans Cream of Chicken Soup
    1 8oz package of cream cheese
    1 package zesty italian dressing seasoning

    Cook on low for 4 hours. Serve over pasta (we like rotini!) and sprinkle with parmesan

    Also, my own personal recipe:
    Chicken (legs, breast,whatever)
    salsa (1 jar or more)
    beans (black, kidney, pinto, your fav)
    corn (1-2 cans)
    a little bit of water or chicken stock

    Serve over rice or in tortillas!!

  23. I get a lot of slow cooker recipes from Gina's blog Skinny Taste (www.skinnytaste.com). I have made almost all of her recipes and they are so delicious and healthy. My hubs is not into healthy food but he can't tell the difference - he loves them all too. You should definitely look there for some great Chipotle-style crockpot meals!

  24. Have you tried BBQ ribs? I usually brown the ribs a bit first, just to remove extra fat, and I use country style boneless (but you can use whatever kind of ribs you like). Place in crock pot and season with salt & pepper. Place onion slices on top, and pour BBQ sauce over the top. You can use your favorite sauce or my mom's recipe: 1/4 C. vinegar, 1 C. ketchup, 3/4 C. water, 3 heaping T. sugar, 3 T. Worcestershire sauce, 1 t. chili powder. Cook on low 8-10 hours.

    Also, have you tried baking ham in foil? Wrap your ham and put it in the crock pot. Cover and cook on high 1 hour, then on low 6-7 hours or until hot. Super easy.

    There are tons of soup recipes that can be done in the crock pot - like taco soup, Santa Fe soup, chili, etc. Also, you can fix chicken 'n noodles in the crock pot and the last time I fixed beans (pinto beans), I did mine in the crock pot. Super easy!

  25. OH! One of our favorite recipes is called Chicken and Stuffing in a crock pot (You can also do pork instead of stuffing!). When I was an intern in DC, I lived with my cousins who had three (now four!) little girls. This was a dinner that everyone loved, only has five ingredients, and is super yummy. It's one of my go-tos when we have people over or to take to someone who had a new baby.

    4 chicken breast halves (or pork if you prefer)
    5 slices swiss cheese
    1/3 cup milk
    1 can cream of chicken (or mushroom if you prefer)
    1 Box Stouffers stuffing.

    Put the chicken breasts in the bottom of the crock pot. Layer cheese on top. Mix soup and milk together and then pour mixture over cheese. Cover with stuffing (not the hole box).

    Cook on low for a long time. (-: It's also good to push the stuffing into the liquid to make sure all the yumminess gets soaked up as it cooks. (-:

  27. Balsamic Chicken

    4-6 boneless skinless, chicken breasts
    2 14.5 oz. cans of diced tomatoes
    1 onion thinly sliced
    4 garlic cloves
    1/2 cup balsamic vinegar
    2 TBS olvie oil
    1 tsp. each: dried oregano, basil, and rosemary
    1/2 tsp thyme
    ground black pepper and salt to taste

    Pour the olive oil in the bottom of crockpot. Place in chicken breasts, salt and pepper each breast. Put sliced onions on top of chicken. Add all of the herbs and garlic cloves. Pour in vinegar and top with tomatoes.

    Cook on high for 4 hours. Serve over angel hair pasta.

  29. This recipe will make the best pork tacos you ever put in your mouth- seriously.

    1 pork tenderloin (original)
    1/2 can enchilada sauce
    1/2 can low sodium beef broth
    1 small can diced green chiles
    1 packet taco seasoning

    Put the tenderloins in the crock pot and dump the other ingredients on top. Cook on low for about 8 hours. Shred the pork for your tacos and top with your favorite toppings. So easy, and absolutely delicious!

  30. LOVE my CrockPot! I use it at least once a week. I just love that I can throw things in when I have a minute earlier in the day and then the dinnertime rush isn't so hectic!

    A few of our favorite recipes:

    Creamy Salsa Chicken:

    ~1 lb chicken breasts
    1 1/2 c. salsa
    1 block cream cheese

    Place chicken in slowcooker. Pour salsa over the top. Cook on low ~6 hours (I'm sure you could do it on high for like ~3 maybe? I've never tried it). Shred chicken and stir in cream cheese.

    I usually serve this over cilantro-lime rice with black beans (and sometimes corn and crushed tortilla chips). DS and DH like it as a burrito filling and leftovers are great! I know it seems really simple, but it's really tasty!

    Creamy Mushroom Chicken:

    ~1 lb chicken breasts
    1 can cream of mushroom soup
    1/4 c. sherry
    Extra mushrooms (canned or fresh), optional
    1 c. sour cream

    Place chicken in slowcooker. Stir together soup and sherry (and extra mushrooms if desired) and pour over top. Cook on low ~6 hours (or on high ~3-4). Shred chicken and stir in sour cream. Serve over rice or egg noodles.

  33. Oh my!! I love my crockpot WAY TOO MUCH!!! But then every time I use it, I remember why and I know I can't love it enough! :) I like to turn regular recipes into crockpot treasures...it's usually pretty simple. That might be an easy way for you to prepare dinner as well.

    Also, for a very easy chili- buy the Hunts tomato sauce for chili, beans of choice, hamburger meat, and a packet of chili seasoning. Hubby and I both agree it couldn't be better...SO easy, SO yummy! Just throw it in the crock pot!

  39. Wow, I was just needing some great Crock Pot recipes. Can't wait to try these! Yesterday I made 'Swiss Steak.'

    1 roast, cut into slices,
    1 onion, sliced
    2 cans stewed tomatoes
    1 can water

    Brown meat. Put in crock pot. Top with onions & tomatoes. Cook on low all day and serve over white rice. Freezes great, so I freeze half in either a big bag or individual portions for a night when my husband worked late also.

    tater tots
    dozen eggs
    bacon bits
    shredded cheddar cheese

    Layer tater tots, cheese, bacon bits, tater tots, cheese, and bacon bits. Beat a dozen eggs and poor on top of the layers. Cook on low for 8 hours. YUMMO~~~

  45. I LOVE pork ribs in the crock pot, and it's soooo easy:
    Slice an onion & put it on the bottom of the pot
    Throw in the ribs
    Add about 1/2 a bottle of Sweet Baby Ray's BBQ sauce.
    Cook on low for 7-8 hrs.
    When serving, top w/ more BBQ sauce.

    Corned beef & cabbage is also a much-loved standby, and we eat that year-round.

    By the way, do you have a baby (1 1/2 qt) crock pot? I love mine- it was like $10, and it makes just enough for the two of us and one dish of leftovers.

  46. Omg my fave crock pot recipe ever? 3-4 frozen chicken breasts and one large jar of salsa. THAT'S IT!!! Cook 6-8 hours on low, shred with two forks and throw in a tortilla with your fave toppings. Sometimes if I'm feeling fancy

  50. I find most of my crock pot recipes on Pinterest. A favorite is:
    Chicken Taco Chili
    1lb boneless skinless chicken (can be frozen)
    1 can kidney beans
    1 can black beans
    1 can corn
    2 cans stewed tomatoes
    1 package taco seasoning
    1 package cream cheese
    Add everything to the crock pot (except for the cream cheese) cook low for 6 hours. Shred chicken and stir in cream cheese. Cook for another hour.

I am not a huge crock pot chef, like you I like to cook more meals that have last minute steps, etc. BUT that being said try this recipe...   53. I know what it takes to have a good credit score or to maintain it. My credit took a bad turn after I took a business loan late last year. I was at 850+ and after applying for a loan, my credit score dropped drastically. “WEBDRIVE AT WRITEME DOT COM” team was so helpful after complaining to them. I’m so grateful.
