My Very Own Recipe.

Well, folks. I did it.

After scouring the pantry and ice box looking for something to scrounge up for supper, I came to the conclusion that it was time I create my own recipe. And so, I did.

And let me just toot my own horn for a second and say, IT WAS AMAZING!

I took pictures along the way, so that I could remember what I did if indeed they were a success. Let me share with you my very first self recipe! (It kind of resembles the Southwestern Taco Pie I posted about last year, but it's different. I like these better!)

TACO POCKETS. (I even created the name. Fun, huh?)

Step 1.

Okay, here is where you can get creative and adjust to your own liking. Take 1/2 pound ground beef and pretend like you are making tacos. Brown the beef, drain the fatty, add your taco seasonings and whatever other seasonings you like. I added garlic and onion salt (because I didn't have an onion.)

Now, here is where your creativity comes in. Add now whatever you think may be good inside a "Taco Pocket". To my meat mixture, I added a red bell pepper, a generous amount of salsa and a little bit of corn.

Step 2.

Take a pre-made pie crust and cut into fourths (or 6th's or 8th's if you think you're tough).

Step 3.

Throw some cheese on your slices.

Step 4.

Spoon a generous amount of the meat mixture over the cheese.

Step 5.

Add more cheese. Your lips with thank you and your hips will curse you.

Step 6.

Cut another pie crust into fourth's and place on top of each triangle. Crimp the edges with water and a fork.

Step 7.

Cut little X's on top and bake at 400 for 30 minutes.

Step 8.

Plate and devour.

These little treasures are delightful. It is basically like a homemade empanada....but better.

  18. I do almost the same thing, but using Grand's Fridge Biscuits (you know, the ones in the tube?). I called them Taco Puffs. Either way, they are delicious!

  23. So, yesterday afternoon, I was sitting at my desk racking my brain to come up with ideas for supper. I needed something easy and fast. And then...I read your blog. So, thank you for helping me feed my family last night. It was delicious! And, we had leftovers to bring for lunch today. Good homecooked food AND saving money. Thanks, Whitney!
