Mrs. Potato Head.



I've never been much of a potato person. I mean, I like a mashed and scalloped as much as the next guy, but other than that, I could really just take them or leave them.

Until I got pregnant.

All I want to do is sit and eat potatoes.

I want them fried. I want them baked. I want them smashed. I want them steamed. I want them scalloped. I want them twice baked. I want them any way I can get them.

Potatoes are my lifeline.

The other day, we had a roast for dinner. Correction: Husby had roast for dinner. I had mashed potatoes. And they were heavenly. Buttery, creamy, fluff-tastic mashed potatoes.

Yesterday, nothing sounded good to eat for lunch. Except for french fries. I had to have salty, greasy french fries. And so I drove to the nearest golden arches and snagged me some.

And last night, for supper, I made Paula Dean's Baked Potato Soup. It hit my potato lovin' spot just perfectly.

PAULA DEAN'S BAKED POTATO SOUP

INGREDIENTS

8 slices Naturally Hickory Smoked Bacon (I used about 5 pieces, and it was perfect for us)
1 onion, diced
1/2 cup all purpose flour
3 (14.5 ounce) cans chicken broth
5 potatoes, baked, peeled and diced
1 teaspoon dried parsley flakes (I omitted this because I didn't have it)
2 cups half & half
1 cup sharp cheddar cheese, grated
1 cup sour cream
Salt & pepper to taste

STEPS

In a Dutch oven cook bacon until crisp; remove and crumble, reserve drippings.

Cook onion in bacon drippings until tender; stir in flour and cook for one minute, stirring constantly. Gradually add chicken broth; cook, stirring constantly until thickened and bubbly. Put in the diced potatoes, parsley, bacon and half & half; cook for 10 minutes. Stir in cheese and sour cream.







Now, it's been over 36 hours since I have made this soup, and the bacon smell is still lingering in my house. That is NOT a good thing for a pregger.

  2. I went through a carrot and dip phase. I couldn't get enough.

    I also NEVER ate fried eggs until I was preganant with my oldest. I could have eaten them morning noon and night. I guess I did at times...LOL

  5. When I was pregnant the first time I craved creamed tuna! Not knock it til you try it. Paula's soup looks yummy. I have to tell you though, my Cheesy Baked Potato Soup is a real winner, too. In fact, I am toting that and my Pasta Fagioli Soup to work today to feed my co-workers. It's a bribe so that they will willingly sit through my training presentations!

    I get you on the "smell" thing. I could not stand the smell of Popcorn or fish while I was pregant with my 2nd child....YUK!

  10. I'm definatly a potatoe addict. I will eat them any which way. My fave way though is to eat them raw with season salt sprinkled on them :D! Thanks for the recipe...look delicious.

    If you ever get a craving through out the day and you don't have some made up.. for some yummola baked potato soup...Chili's is great...

    I always wonder about what foods I will crave when I am prego... There are certain things I despise right now and sometimes I even get scared that I will like them when I am pregnant - haha - like mayo and mustard - UGH!!!

    I have always wondered what I will crave when I am pregnant. My mom ate crab rangoon when she was pregnant with me at least 3-4 times a week. And, oddly enough, I am deathly allergic to shellfish! :) I had a girlfriend who just had a baby last month and she ate Jell-O non stop. Too weird!

  17. I would go to KFC and just eat mashed potatoes & gravy when I was pregnant with my son. I would eat all of my french fries before anything else if it came with my dinner. I'm going on record & saying you are going to have a boy just from my experience, LOL!

    When I was pregnant I couldn't get enough of the Chilie's Boneless Buffalo Chicken salad (minus the feta cheese). I had it like twice a week and the take out folks knew my Husband on a first name basis!! Gotta love prego cravings.

  22. Their office is gorgeous! And, they are so sweet and very thorough! I'm glad you're going to them! Did you get an ultrasound done? The tv's are awesome because you get to see it huge on the tv! You don't have to squint and look at the tiny ultrasound machine monitor!

  25. I made potato soup last night from Taste of Home. It was really good and I'm looking forward to lunch today!

    My sisters both wanted mashed potatoes in their early pregnancies, too. We'd go to a restaurant and they'd order a side salad and an order of mashed potatoes :)

  31. OMG Whitney...that soup looks amazing. I love love love anything to do with potatoes, but Glenn makes THE best mashed potatoes ever. I try, but can't even come close to his. So that's his job on Thanksgiving!!!

  32. I just made a pot of potato soup last Saturday. I make it pretty much the same way minus the sour cream. It's really good if you add smokey cheddar cheese to it also.

  34. This is too cute! I like slicing up potatoes, frying them in a pan with a little olive oil, oregano, basil, and a dash of salt and pepper. This is how my Grandpop used to cook them and it always reminds me of him.

  38. Isn't it so funny how our prego bodies crave such interesting things. I made my menus around everything I was craving, which was tomatoes. Raw, cooked, you name it. I drank tomato juice, ate raw tomatoes, spaghetti, I had it all. Now my son loves tomatoes. Maybe you're little one will love potatoes! :) That recipe looks delicious!     You certainly wouldn't like coming to my house with all of my freaky mannequins around, lol! That truly WAS your manneTWIN, what a hoot!

    I have a hankerin for a smoothie now, I just love the frozen peaches in them. I mix in some chocolate pudding mix and milk.. yummo.

    Hope your nausia doesn't last. The blood hound nose will tho, lol!

  44. We are definitely going through the same thing! I have a been a freak about potatoes too! Seriously! This is so funny because last week I made pot roast with carrots and potatoes and I basically just ate potatoes with gravy! Then! Monday I made potato soup and we've been eating every night since! I think the Husband is finally finishing it off tonight! We are definitely pregnato!

    I wasn't pregnant that long ago-my ob didn't even give me vitamin samples. I just took the Wal-Mart and Target brand. My kids turned out ok, at least I think so;)

  48. That's funny. I craved french fries with my first pregnancy. Ate them ALL the time...couldn't get enough of them. And you know what? My son hates french fries. I kinda feel like I robbed him of french fry goodness.
