A *Healthy* Recipe ... What?!

So, I'm not exactly known for healthy recipes on there here blog, (see: Muenster Chicken, Manicotti, and Chocolate Pecan Toffee Bars), but I have one today!

Almond Flour Chicken Tenders.

I Instagrammed a picture of them (username: whit_neenee) the other night and several people wanted the recipe, so here you go!  They are super nutritious and absolutely delicious!

  • 1lb boneless, skinless chicken breasts (I used the tenders.)
  • 1 cup almond flour
  • 1 tbsp paprika
  • ½ tsp garlic powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp sea salt
  • 2 eggs, lightly beaten
  • olive oil cooking spray
  1. Preheat oven to 375
  2. Slice chicken breasts into long strips, 1-2″ wide (If you use the tenders, you won't need to do this.)
  3. Mix together almond meal, paprika, garlic, cumin, cayenne, pepper, and salt
  4. Dredge each piece of chicken in egg and then coat with almond spice mixture
  5. Place in a cookie sheet greased with cooking spray (I lined with foil so the bottoms would crisp up, too!)
  6. Bake for 20-25 minutes, until golden. 


This is the basis for the recipe.  I tweaked it to my liking, and added some garlic and a mixture of other peppers.  The almond flour gives it a really great texture, and it doesn't even taste like you're eating something "healthy".  My whole family loves it and devours it!  Levi likes to dip his in honey, and it makes me happy knowing they're not getting all that starchy flour in their little tummies.

At least for that night.  Heaven knows we love us some Chick-Fil-A on a weekly basis. :)

I went Paleo a few months ago for about a month after Husby enlightened me to the negative effects that he thought gluten were having on me.  When I stopped the gluten, my symptoms went away!  So, I'm trying to cut back on the gluten and hopefully start feeling better again and relieving some tummy issues. And when there are recipes this yummy that I can have to fix the cravings, it's totally doable!

I like to prepare an entire bag of chicken tenders.  That way, I get to eat the cold leftovers for lunch the next day!  EVEN BETTER!!!

  1. Those look DELICIOUS! I've been gluten free for almost two years now and it's totally changed my life! Just be forewarned - almond flour can be pretty high calorie, so I always have to limit my portions when I use it in recipes!
