A Recipe: Hashbrown Casserole

One of my favorite side dishes to order at The Cracker Barrel is hashbrown casserole. Yum-in-da-TUM! I found this recipe for HBC (I shortened it because I can't decide if hashbrown is one or two words and my computer tells me it's two words, but it looks weird as two words, so I'm rebelling and leaving it as one. Phew.) and it is SO delish. I could eat the entire pan if you let me hide in a dark corner with a fork and a salt and pepper shaker.

1 (2 pound) package frozen hash brown potatoes, thawed
1/2 cup melted butter
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
1/2 cup chopped onions
2 cups shredded Cheddar cheese
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup melted butter

Directions

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, cheddar cheese, salt and pepper.
Place mixture in a 3 quart casserole dish.
Bake covered in preheated oven for 40 minutes.

This side goes really well with a beef dish. I like to serve them with my Porcupine Meatballs. Scrumdiddlyumptious!

  1. My Mom has made this for years and it's my favorite dish she makes! Ours is a little different though, no onions and we crush cornflakes and sprinkle them on top for a crust.

  8. Hashbrown casserole is a staple at all our family holidays but we have always used cream of mushroom soup, it's delicious! I also love cracker barrel's!

  16. I LOVE thi recipe! Thank you for posting, I seriously made it the morning you posted and just finished the last dish of it today! YUMM! I don't think I'll be getting it at cracker barrell anymore, not when I can make it at home and a lot less calories when you use 99% FFree cream soup and lite sourcream! Thanks for making my day!!!

  21. I've made this dish several times now. I usually double everything and add 3 small packs of ham chunks and a full smoked sausage to it. (I have a big family) The 4 cups of cheese end up being mixed into the dish and then some more cheese is sprinkled on top to give it a bit of a crust. The last ingredient calls for 1/4 cup butter even though there's already 1/2 cup going into it. So, I omit that. I also omit the onion, because my family doesn't like it even though I do. It ends up taking 2 casserole dishes and the cooking time takes about 1 hr and 20 min at 350, as the hash browns are still frozen when I add them. The taste is like heaven when it's done though, even though I know it's really bad for you.
