A Unique Dish To Please All Ages

At this point, you may be thinking to yourself..."are ALL her posts about food? This chick needs to get a grip!"

Am I right? Are ya thinkin' it? Well, if you are...tough luck. I love food and food loves me. Well, not as much as I love it, but you get the picture.

And no...I don't eat fried food as much as you think based off this weeks posts, it's just that this particular week, I DID eat a lot of fried food. And it gave me a tummy ache.

And an extra inch around my thigh.

Enough excuses, let's get on with the recipe.

I decided to go out on a limb and make a rather strange-sounding recipe. Husby thought it sounded gross, but I ignored his snide remarks and did it anyway.

It's an entree at Planet Hollywood, for crying out loud...it MUST be good.

And it was.

Introducing... CAP'N CRUNCH CHICKEN TENDERS!

First you buy 2 boxes of cereal. These exact two.



DO NOT buy Cap'N Crunch Red Berries or you will be in a world of hurt.

Crunch them up in a makeshift crunch-ifier. My crunch-ifier of choice was a measuring bowl and a tart press-thingy.



Isn't it cute? It crunched them to perfection.

Then you go through a rather gross process of dipping the chicken in a flour mixture, an egg mixture, and the crunch mixture. My hands were a goopy mess at this point, so I did not capture a picture. My sincerest apologies.

Then you heat a large pan with oil and drop them in, one by one. Let them fry up for about 5 minutes. I like my chicken CRISPY.



Fry, fry, fry. Don't worry about your arteries or cholesterol at this point. Just go with it.

The end result will be this beautiful pile of golden chicken goodness. Perfect.



If you're not drooling at this point, make an appointment with your doctor this very second.

For there is something seriously wrong with you.



Serve with your favorite down-home side items. I chose these:



The chicken by itself is delicious, but if you really want to kick the flavor up a notch, you MUST make the dipping sauce to go with it.

A creole honey mustard that perfectly sets off the flavors. Whew. Amazing.



Husby apologized for his snide remarks and asked if we could work this into our "food-we-make-alot" recipes as he devoured the chicken. He gobbled it up. Gobble, gobble, gobble! Haha, get it? Wait, is it a turkey that gobbles, or a chicken?

Regardless, you must make this and let me know how you like it. REMEMBER to make the sauce. It is not the same without it.

Recipe Time!

Ingredients:

CAP'N CRUNCH CHICKEN
2 1/2 cups Captain Crunch Cereal (I just used 2).
1 cup Cornflakes
1 Egg
1/2 cup Milk
1/2 cup Flour
1 tsp. Onion powder
1 tsp. Garlic powder
1/2 tsp. Black pepper
2 pounds Chicken breast, cut in 1-oz. tenders (I bought pre-cut tenders at the store).
Vegetable oil for frying

CREOLE HONEY-MUSTARD SAUCE
1/2 cup Mayonnaise
2 tbsp. Honey
1 tbsp. Prepared mustard


Preparation
Coarsely grind or crush the two cereals and set aside. Beat the egg with milk and set aside.

Stir together the flour, onion and garlic powders and black pepper; set aside

Dip the chicken in the seasoned flour and coat well; shake off the excess flour. Dip in the egg wash, coating well, then dip in the cereal mixture, coating well. (Coat well, people. You might even want to wear a coat, there's so much coatin' going on. That hot oil tends to jump. It's all about arm protection.)

Heat oil in a large heavy skillet to 325. Drop coated chicken tenders carefully in the hot oil and cook until golden brown and fully cooked, 3 to 5 minutes depending on size. Drain and serve immediately with sauce.

For sauce, combine all ingredients and mix well.

  31. Just had to comment again. I made the chicken tonight. I cut mine into smaller pieces for frying and when Katie tasted it she said "That's the best chicken I have ever tasted!" But, I didn't stop there, I made my homemade sesaame sauce and poured it over the pan of fried chicken chunks and let it glaze in the oven for 10 minutes. Oh Yum!

    (I've found an easy way to 'crunch' is to use a ziplock bag and a rolling pin.)
